    Preheat the oven to 400°F (200°C). Toss 1½ lb boneless chicken chunks with 2 teaspoons garam masala, ½ teaspoon ground cumin, and 1 teaspoon turmeric until evenly coated — the chicken should look golden-spiced, not pasty.

    Heat 1 tablespoon oil in a Dutch oven or oven-safe casserole over medium-high. Brown the chicken in batches 3–4 minutes until colored on all sides (don't crowd or it steams). Transfer to a plate — it won't be cooked through yet.

    Add remaining oil (about 2 tablespoons total used) with 2 thinly sliced medium onions, 2 minced garlic cloves, and 1 tablespoon grated ginger. Cook over medium until onions are soft and deep golden, about 8–10 minutes — this onion layer is most of your biryani flavor.

    Stir in 1½ cups basmati rice rinsed until water runs mostly clear; toast 2 minutes until grains look slightly translucent at the edges. Nestle chicken back in a single layer. Pour in enough low-sodium chicken stock (2½–3 cups) to just cover; add 1 teaspoon salt.

    Cover tightly and bake 30–40 minutes until rice is tender, stock is absorbed, and chicken is cooked through (165°F). Rest covered 5 minutes off heat, then fluff gently with a fork — don't mash. Top with cilantro; pass cumin-mint yogurt if you like. You want fluffy spiced rice with tender chicken and sweet onion — not gummy wet rice or dry crunchy grains on top.
