    Trim stems from 1 pound fresh okra and slice into ½-inch rounds (or use frozen sliced okra — no need to thaw fully). Dice 1 onion; mince 3 garlic cloves. Optional: 4 oz smoked sausage or a strip of bacon for the pot.

    Warm 2 tablespoons oil or bacon drippings in a wide skillet or pot over medium. Soften onion 5–6 minutes; add garlic 30 seconds. If using sausage, brown it first and scoop aside. Add okra and cook 5–8 minutes, stirring, until it loses some slime and edges brown a little — this step matters.

    Stir in 1 can (14–28 oz) diced or crushed tomatoes with juice, ½ teaspoon salt, ½ teaspoon black pepper, ½ teaspoon thyme or Cajun seasoning, optional pinch of sugar if tomatoes taste sharp, and ½–1 cup water or stock. Return sausage. Simmer uncovered 15–25 minutes until okra is tender and the stew is thick and spoonable, not watery. Taste and finish with hot sauce or a squeeze of lemon.
