    Pound 2 chicken breasts to ½-inch thickness and cut them into 4 pieces. Pat dry, then season both sides with salt, pepper, and a pinch of thyme.

    Heat 1 tablespoon oil in a large skillet over medium-high. Sear the chicken 4–5 minutes per side, until browned and 165°F. Move it to a plate.

    Add 8 ounces sliced mushrooms to the same skillet. Cook 5–7 minutes, stirring once or twice, until their moisture cooks off and the edges turn brown.

    Add 1 tablespoon butter and 2 minced garlic cloves. Stir for 30 seconds, then pour in ¾ cup chicken broth. Scrape up the browned bits and simmer 3 minutes.

    Stir in ½ cup cream or half-and-half. Simmer 2–3 minutes, until the sauce lightly coats a spoon. Return the chicken and its juices and warm for 2 minutes.

    Taste for salt, scatter with parsley, and serve right away. The mushrooms should be browned, not pale and watery.
