    Cook 12 oz penne or fettuccine in salted water until al dente. Reserve ½ cup pasta water, then drain.

    Season 1 lb bite-size chicken breast pieces with 1 teaspoon kosher salt, ½ teaspoon black pepper, and 1 teaspoon Italian seasoning. Heat 2 tablespoons olive oil in a wide skillet over medium-high and sear the chicken 6–8 minutes until cooked through and lightly browned. Remove to a plate.

    In the same pan, sauté 3 minced garlic cloves and ½ cup chopped sun-dried tomatoes 1 minute until fragrant. Pour in 1 cup chicken broth and 1 cup heavy cream; simmer 3 minutes until slightly thickened. Stir in ½ cup grated Parmesan until the sauce looks smooth and silky.

    Return the chicken; add the pasta and 2 cups baby spinach. Toss, loosening with pasta water until every noodle is coated and the spinach wilts. Top with fresh basil. You want creamy sun-dried-tomato pasta with tender chicken and wilted spinach — not a thin watery sauce or a broken oily cream.
