Pat 2 large chicken breasts dry and slice them into 4 cutlets. Season both sides with salt, pepper, and ½ teaspoon Italian seasoning.

Heat 1 tablespoon olive oil in a wide oven-safe skillet over medium-high. Sear the cutlets 4–5 minutes per side, until browned and 165°F. Move them to a plate.

Lower the heat to medium. Add 2 minced garlic cloves and ½ cup chopped sun-dried tomatoes packed in oil. Stir for 1 minute, until the garlic smells sweet and the tomatoes soften.

Pour in ½ cup chicken broth and scrape the skillet. Add ¾ cup heavy cream and ¼ cup grated Parmesan. Simmer 3–4 minutes, stirring, until the sauce coats a spoon.

Return the chicken and any juices to the skillet. Spoon sauce over the top and simmer 2 minutes, until hot through. Stir in a handful of baby spinach if using.

Take the skillet off the heat and rest 5 minutes. The sauce will thicken slightly; finish with black pepper and serve with bread, rice, or pasta.
