    Heat oven to 350°F. Grease and flour a 9x5 loaf pan (or two 8-inch rounds). Whisk flour, baking powder, and salt.

    Beat butter and sugar until light and fluffy, 3–4 minutes. Beat in eggs one at a time, then vanilla.

    Add the flour mixture in three additions, alternating with milk, starting and ending with flour. Mix just until smooth.

    Scoop about 1 1/2 cups batter into a second bowl. Stir cocoa and hot water into a paste, then fold into that batter until even.

    Spoon vanilla and chocolate batters into the pan in alternating dollops. Drag a knife through a few times for swirls—don't overmix. Bake 50–60 minutes (loaf) or 28–32 minutes (rounds) until a toothpick comes out with a few moist crumbs. Cool 15 minutes in the pan, then turn out.
