    Add 2 cups ripe mango chunks (fresh or frozen, thawed), 1½ cups plain yogurt, ½ cup cold water or milk, 1–2 tablespoons sugar or honey, and ¼ teaspoon ground cardamom to a blender. Toss in a few ice cubes if you want it colder and thicker.

    Blend on high until completely smooth and pale orange-gold, 30–60 seconds — no mango strings or yogurt streaks.

    Taste. Blend in another spoon of sweetener if the mango is tart, or a splash of water if it's too thick to pour.

    Pour into two glasses, garnish with mint if you have it, and serve chilled. You want a creamy, cold mango lassi that tastes sweet-mango first with a hint of cardamom — not thin yogurt water or a blender full of fibrous mango bits.
