    Toast 3–4 tablespoons uncooked jasmine rice in a dry skillet over medium heat, shaking often, until deep golden and nutty-smelling, 5–7 minutes — pale rice tastes raw. Cool a few minutes, then grind to a coarse powder (spice grinder, mortar, or zip bag + rolling pin). You want sandy bits, not flour.

    In the same skillet over medium-high, cook 1 lb ground chicken with 2 tablespoons water, breaking it into small crumbles, until no pink remains and most of the liquid has cooked off, 6–8 minutes. The meat should look fluffy and moist, not gray and dry.

    While the chicken is still hot, stir in 2 tablespoons fresh lime juice, 1½ tablespoons fish sauce, 1 teaspoon brown sugar, 1–2 finely chopped Thai chiles, and 1 tablespoon toasted rice powder. Taste — it should hit sour, salty, and a little sweet with chile heat.

    Fold in 1 small thinly sliced shallot, ½ cup chopped mint, ⅓ cup chopped cilantro, and 2 sliced green onions. The herbs should stay bright green; don't cook them.

    Spoon into butter lettuce cups with cucumber slices on the side. You want warm, herby chicken with crunchy toasted-rice bite — not a bland gray scramble or a soupy dressing pooling at the bottom.
