    Drain and press firm tofu 10–15 minutes, then slice into planks. Whisk 3 tablespoons soy, 1 tablespoon sugar, 1 teaspoon sesame oil, minced garlic, and a spoon of gochujang or gochugaru into a quick BBQ glaze.

    Pat tofu dry again and brush or toss with some of the glaze. Heat oil in a skillet over medium-high until it shimmers.

    Sear planks 3–4 minutes per side until browned. Add the rest of the glaze and spoon it over as it thickens 1–2 minutes — you want lacquer, not a puddle.

    Rest a minute on a plate, then slice. Eat with rice, kimchi, and lettuce. The outside should taste caramelized-soy; the inside stays soft.
