    Heat the oven to 425°F. Slice 2 large chicken breasts into ½-inch cutlets and pat dry. Season with 1 teaspoon kosher salt, ½ teaspoon paprika, and black pepper.

    Set up three bowls with ½ cup flour, 2 beaten eggs, and 1½ cups panko mixed with ½ teaspoon garlic powder. Coat each cutlet in flour, egg, and panko, pressing the crumbs on firmly.

    Put the cutlets on an oiled rack over a sheet pan and drizzle or spray the tops with oil. Bake 15–20 minutes, turning once, until crisp and the thickest piece reaches 165°F.

    While the chicken cooks, warm ⅓ cup honey, 1–2 tablespoons hot sauce, 1 tablespoon butter, and 1 teaspoon apple cider vinegar in a small pan for 1–2 minutes. Brush it over the hot chicken and serve with slaw or pickles.
