    Whisk the mayonnaise, honey, Dijon, vinegar, salt, garlic powder, and paprika in a bowl. Chill the dressing while you cook the chicken.

    Cut the chicken into 1- to 2-inch pieces. Cook it in a lightly greased skillet over medium for 7–10 minutes, stirring occasionally, until browned and 165°F in the largest piece. Let it cool for a few minutes.

    While the chicken cools, chop the celery and dried cranberries. Cut the chicken into small pieces once it is comfortable to handle.

    Toss the chicken, celery, cranberries, and dressing in a bowl. Taste for salt, then serve right away or chill until cold.
