Slice the chicken breasts in half through the side and pound the pieces to about ½ inch thick. Pat them dry, season with lemon pepper, and dust both sides with flour.

Heat the olive oil in a large skillet over medium-high. Sear the chicken in batches for 4–5 minutes per side, until golden and 165°F inside. Set it on a plate, leaving the browned bits in the pan.

Melt the butter over medium. Stir in the garlic for 1 minute, then add the flour and cook 1–2 minutes. Whisk in the broth a splash at a time until smooth.

Stir in both mustards, honey, dill, parsley, and Italian seasoning. Bring the sauce to a bubble, lower the heat, and slowly stir in the cream.

Return the chicken and plate juices to the pan. Cover partly and simmer about 5 minutes, until the sauce coats the chicken and the center stays juicy.
