    Pat 1½ pounds boneless chicken thighs (or breasts pounded even) dry. Season with salt, pepper, and ½ teaspoon paprika or cayenne. Optional quick dredge: flour → beaten egg → flour again for extra crunch. Heat ½ inch neutral oil in a heavy skillet to about 350°F, or heat oven to 425°F and oil a sheet pan.

    Fry in batches 4–6 minutes per side until deep golden and cooked through (165°F), or bake 18–25 minutes flipping once until browned and done. Drain on a rack. Mix the glaze while the chicken rests: ¼ cup honey, 2–3 tablespoons hot sauce (Frank's-style or Louisiana), 1 tablespoon butter melted, ½ teaspoon cayenne or chili flakes, pinch of salt, and optional splash of apple cider vinegar.

    Toss hot chicken in the honey-hot glaze until glossy and sticky, or brush it on. Taste — you want sweet heat that clings, not a watery sauce pooling under the chicken. Add more hot sauce if you want it meaner.
