    Season both sides of the chicken thighs with salt and pepper. Heat the oil in a large skillet over medium-high, then sear the thighs skin-side down for 5–6 minutes until golden. Flip and cook 2 minutes more.

    Whisk the hoisin sauce, soy sauce, honey, hot water, ginger, and garlic in a bowl. Pour it over the chicken in a slow cooker.

    Cover and cook on high for 3–4 hours or low for 5–6 hours, turning the thighs halfway through. The meat should be tender and 165°F at the bone-free center.

    Spoon the chicken over rice and pour on some of the cooking sauce. Sprinkle with sesame seeds or cilantro if you have them.
