Pat 1½ lb boneless skinless chicken thighs dry and season with ½ teaspoon kosher salt. In a small bowl, whisk 3 tablespoons honey, 1 tablespoon fish sauce, 1 tablespoon light soy sauce, 1 tablespoon fresh lime juice, optional 1 thinly sliced Thai chile, and 2 tablespoons water until smooth.

Heat 1 tablespoon neutral oil in a large skillet over medium-high until it shimmers. Lay the thighs in a single layer (work in two batches if they crowd) and sear without moving until deep golden underneath, about 5 minutes. Flip and cook the second side until browned and nearly cooked through, another 5 minutes — thickest pieces should feel firm with just a hint of pink left.

Lower heat to medium. Push chicken aside, add 5 finely minced garlic cloves to the oil, and stir 20–30 seconds until fragrant and pale gold — don't let it go brown-black or the glaze turns bitter.

Pour in the honey glaze. Turn the chicken several times as the sauce bubbles and thickens into a sticky coat, 3–4 minutes. Chicken should reach 165°F and look glossy; the sauce should cling to a spoon, not pool watery under the meat.

Rest 2 minutes, slice against the grain, and spoon extra glaze over the top. Serve with cilantro and steamed jasmine rice. You want sticky honey-garlic chicken with a salty-sweet glaze — not pale under-seared thighs or burnt garlic bitterness.
