Pat 1½ pounds boneless chicken thighs dry and season with ¾ teaspoon kosher salt and ¼ teaspoon black pepper. Whisk ⅓ cup honey, ¼ cup low-sodium soy sauce, 2 tablespoons water, and 5 minced garlic cloves.

Heat 1 tablespoon neutral oil in a skillet over medium-high. Sear the thighs 5–6 minutes per side, until browned and the center reaches 165°F; transfer them to a plate.

Pour the honey-garlic mixture into the skillet and bring it to a bubbling simmer. Cook 2–3 minutes, scraping up browned bits, until it thickens enough to leave a trail when stirred.

Return the chicken and its juices to the pan. Turn the pieces through the sauce for 2–3 minutes until glossy and hot. Sprinkle with scallions and sesame seeds, and serve with rice.
