Cut 1½ pounds boneless chicken thighs into 1-inch pieces. Toss with ¾ teaspoon kosher salt, ¼ teaspoon black pepper, and ¼ cup cornstarch until lightly coated.

Heat 2 tablespoons neutral oil in a wide skillet over medium-high. Cook the chicken in one layer for 5–7 minutes, turning once or twice, until browned and 165°F. Work in batches if the pan is crowded, then transfer the chicken to a plate.

Whisk ⅓ cup honey, ¼ cup low-sodium soy sauce, ¼ cup water, 4 minced garlic cloves, 1 tablespoon rice vinegar, and 1 teaspoon grated ginger. Pour into the skillet and simmer 2–3 minutes until glossy.

Return the chicken and toss 1–2 minutes, until the glaze clings and bubbles around the pieces. Top with sesame seeds and scallions; serve with rice and steamed broccoli.
