Method

7 steps

  1. 1

Stir the warm water, yeast, and sugar together in a large bowl and let it sit 5 minutes, until foamy. Stir in the olive oil.

  2. 2

Add the whole wheat flour, 2 cups of the all-purpose flour, and the salt and stir until a shaggy dough forms. Knead 5 to 7 minutes, adding the remaining flour as needed, until smooth and only slightly tacky.

  3. 3

Cover the bowl and let the dough rise in a warm spot about 1 hour, until doubled.

  4. 4

Set a baking sheet or pizza stone on the lowest oven rack and heat the oven to 475°F.

  5. 5

Divide the dough into 8 pieces, shape into balls, and let them rest 10 minutes. Roll each into a 6-inch round about 1/4 inch thick.

  6. 6

Bake 2 or 3 at a time on the hot sheet 4 to 5 minutes, until they puff into balloons and are pale golden in spots.

  7. 7

Wrap the hot pitas in a clean towel as they come out so they stay soft.
