    Heat the oven to 375°F. Grease a 9×13-inch baking dish. Cook sausage and onion in a skillet until the sausage is browned and 160°F. Drain fat.

    Spread hash browns in the dish. Scatter the sausage mixture and 1½ cups cheddar over them.

    Whisk eggs, milk, salt, and pepper. Pour evenly over the dish and top with the remaining cheese.

    Bake for 40–45 minutes, until the center is set and a knife comes out clean. Rest 10 minutes before cutting.

Dry the hash browns well so the casserole is not watery.

The center should not jiggle when you nudge the dish.

Use what you have

Skip the sausage and add sautéed peppers for a meatless pan; the eggs still need to set fully.

Pepper Jack can replace cheddar if you want a little heat.
