Hash Brown Breakfast Casserole

A short rest and buttermilk give these pancakes a tall, tender stack you can cook on a weekday morning.
Amounts scale with servings. Pan size and cooking time may need adjusting for larger batches.
Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.
Whisk buttermilk, egg, melted butter, and vanilla. Pour into the dry ingredients and stir until a few lumps remain. Rest 5 minutes.
Heat a griddle or skillet over medium heat and butter it lightly. Scoop ¼-cup portions. Cook until bubbles form and the edges look set, 2–3 minutes. Flip and cook 1–2 minutes more.
Keep finished pancakes on a warm plate and butter the pan between batches as needed.
Lumps in the batter are fine. A smooth batter makes tougher pancakes.
If the first pancake browns too fast, lower the heat before the rest of the batch.
No buttermilk? Stir 1 tablespoon lemon juice into 1¼ cups milk and wait 5 minutes.
Fold in blueberries after the batter rests, ½ cup at a time.
The baking powder may be old, or the batter was overmixed. Use fresh leavening and stop stirring when the flour disappears.
It loses lift. Mix a fresh batch, or freeze leftover cooked pancakes and toast them.
