Sauté minced onion in a little butter or oil until soft and lightly golden, 6–7 minutes; cool. Combine ground beef (or beef-pork) with the onion, milk-soaked panko, egg, salt, and pepper. Form thick oval steaks and dimple the centers.

Sear in a hot skillet with oil 3–4 minutes per side until a deep crust forms. Add a splash of red wine or broth, cover, and cook 4–5 minutes until the center hits about 160°F.

Transfer steaks to a warm plate. Build a pan sauce: ketchup, Worcestershire-style sauce, soy sauce, a knob of butter, and a spoon of the pan juices. Simmer 1–2 minutes until it coats a spoon and smells sweet-savory.
