Whisk in ½ cup flour and cook the roux, stirring constantly, 15–25 minutes until it's chocolate-brown and smells deep and nutty — not burnt. If it smells acrid or looks black flecks, start over. Add the trinity; cook 5–7 minutes. Garlic 30 seconds.

    Stir in 1–2 tablespoons Cajun seasoning, 1 teaspoon thyme, 1 bay leaf, optional 1 cup sliced okra or 1 can diced tomatoes. Pour in 6 cups chicken stock gradually, whisking. Add sausage and chicken. Simmer gently uncovered 35–45 minutes until chicken is tender and the gumbo is thick enough to coat a spoon but still soupy. Skim excess oil if needed. Taste for salt and heat; finish with a splash of hot sauce or vinegar-style hot sauce.
