    Stir 3 tablespoons fresh lime juice, 1½ tablespoons fish sauce, and 1 tablespoon brown sugar in a small bowl until the sugar fully dissolves — no grit on the spoon. Set aside.

    In a large mortar (or a sturdy bowl with a wooden spoon), gently pound 2 roughly chopped garlic cloves, 1–2 sliced Thai chilies, and 2 tablespoons roasted peanuts just enough to bruise and release aroma — 10–15 taps. You want coarse bits and fragrant oil, not a smooth paste.

    Add 1 cup green beans cut into 1-inch pieces and 1 cup halved cherry tomatoes. Bruise them lightly with the pestle or the back of a spoon so they crack and take on the garlic-chile — tomatoes should look a little smashed, beans slightly wrinkled.

    Transfer that mix to a large bowl. Add 3 cups shredded green papaya, 1 shredded small carrot, the dressing, and 2 tablespoons chopped cilantro. Toss hard with tongs or your hands (gloves help) until every strand is coated and looks glossy, 30–60 seconds.
