    Make syrup first so it cools: simmer sugar, water, honey, lemon juice, and cinnamon stick 8–10 minutes until slightly thickened. Cool to room temperature; discard cinnamon stick.

    Heat oven to 325°F. Butter a 9x13 pan. Mix walnuts, 1/2 cup sugar, cinnamon, and cloves.

    Keep phyllo under a damp towel. Layer 8 sheets in the pan, brushing each with melted butter. Sprinkle on about 1/5 of the nut mixture. Repeat buttered phyllo (4–5 sheets) + nuts four more times. Finish with 8–10 buttered phyllo sheets on top, brushing the top well.

    With a sharp knife, cut into diamonds or squares down to the bottom. Bake 45–55 minutes until deep golden. Immediately pour cooled syrup evenly over the hot baklava. Cool at least 4 hours (overnight is better) before lifting pieces out.
