    Whisk the cornstarch and cold water in a bowl. Stir in the broth, sugar, soy sauce, garlic, vinegar, chili paste, hoisin, sesame oil, and red pepper flakes.

    Mix the flour and cornstarch in one bowl. In another, beat the eggs with 2 tablespoons of the sauce. Cut the chicken into bite-size pieces and pat it dry.

    Dip the chicken in the egg mixture, then toss it in the flour mixture until no wet spots show. Heat the peanut oil to 365°F in a deep pot.

    Fry the chicken in batches for 4–5 minutes, turning once or twice, until crisp and 165°F inside. Drain on a wire rack so the bottoms stay crunchy.

    Cook the broccoli in 2 tablespoons of the hot oil for about 5 minutes. Pour the sauce into the skillet, let it bubble until glossy and thick, then fold in the chicken and broccoli.
