Slice the chicken breasts through the side into thin cutlets. Pat them dry, then season both sides with salt, pepper, and parsley.

Heat the olive oil in a large skillet over medium-high. Sear the cutlets for 4–5 minutes per side, until golden and cooked through. Set them on a plate.

Pour the wine into the skillet and scrape up the browned bits. Let it bubble for about 2 minutes, then stir in the garlic and cook 1–2 minutes until fragrant.

Add the butter and flour. Stir for 1–2 minutes, then whisk in the broth and cream a splash at a time. Simmer about 8 minutes, until the sauce coats a spoon.

Lower the heat and stir in the Parmesan and lemon juice. Return the chicken and its plate juices, spoon sauce over it, and warm for 3–5 minutes.
