    Whisk 3 tablespoons fresh lime juice, 2 tablespoons fish sauce, 1 tablespoon brown sugar, 1 small grated garlic clove, and optional sliced Thai chili until the sugar dissolves. Set the dipping sauce aside — it should taste bright, salty, and a little sweet.

    Fill a shallow dish (pie plate works) with warm water — not hot, or the wrappers tear. Dip one round rice-paper wrapper for 8–10 seconds until it just softens at the edges; lay it flat on a clean damp board. It will keep softening as you fill — don't soak until floppy or it sticks and rips.

    Across the lower third of the wrapper, layer a few halves of cooked shrimp (from 8 oz total), a small nest of cooled thin rice vermicelli (from 3 oz dry cooked), torn butter lettuce, carrot matchsticks, cucumber matchsticks, mint leaves, and cilantro. Don't overstuff — about a small handful of filling total.

    Fold the bottom edge snugly over the filling, tuck in both sides like a burrito, and roll tightly toward the top. The wrapper should look translucent with shrimp showing through. Repeat with the remaining wrappers, keeping finished rolls under a damp towel so they don't dry out.

    Slice on a diagonal with a sharp wet knife and serve right away with the dipping sauce. You want soft, tight rolls with cool crunch and herbs — not torn wrappers, soggy noodles, or rolls that fall apart when you pick them up.
