    Heat 2 tablespoons olive oil in a Dutch oven or wide pot over medium heat. Cook 1 sliced leek (white and light green parts, rinsed well) and 2 diced carrots 6–8 minutes until soft and sweet-smelling — the leek should look translucent, not browned hard.

    Stir in 3 minced garlic cloves for 30 seconds. Add two 15-oz cans cannellini beans (rinsed), 3 cups low-sodium vegetable broth, 1 teaspoon chopped fresh rosemary, ½ teaspoon kosher salt, and ¼ teaspoon black pepper. Bring to a simmer.
