    Heat the butter and olive oil in a large oven-safe skillet over medium. Add the sliced onions, sugar, and salt, then cook 20–25 minutes, stirring every few minutes, until soft, deep golden, and sweet.

    Stir in the garlic for the final 1–2 minutes. Add the orzo and toast it for about 2 minutes, then fold in the shredded chicken, thyme, black pepper, and Worcestershire sauce if using.

    Pour in the broth and cream and bring the mixture to a gentle simmer. Cover and cook on low for 8–10 minutes, stirring now and then, until the orzo is tender and most of the liquid is absorbed.

    Stir in 1 cup of mozzarella and the Parmesan until melted. Heat the oven to 375°F, then spread the remaining mozzarella over the top.
