    Melt 2 tablespoons butter with 1 tablespoon olive oil in an oven-safe skillet over medium. Add 3 thinly sliced yellow onions and ½ teaspoon kosher salt. Cook 25–30 minutes, stirring every few minutes, until soft, deep brown, and sweet-smelling.

    Push the onions aside. Season 1½ pounds boneless chicken thighs with ¾ teaspoon salt and ½ teaspoon black pepper, then sear 5–6 minutes per side until browned; transfer them to a plate.
