Bring a pot of well-salted water to a rolling boil — it should taste like the sea. Add frozen edamame in pods (about 12 ounces) straight from the freezer.

Boil 3–5 minutes until the pods look bright green and a bean pops out tender when you squeeze one. Don't go much longer or they turn mealy.

Drain well. While still hot and damp, toss with flaky salt or a little more kosher salt so it sticks to the pods. Optional: a drop of sesame oil or chili flakes.

Pile into a bowl and serve warm. Squeeze beans from the pods into your mouth — the pods are the napkin, not food. They should taste salty and sweet-green.
