Slice each chicken breast in half through the side to make thin cutlets. Mix the flour and lemon pepper seasoning, then press the mixture over both sides of the chicken.

Heat the oil in a large skillet over medium. When it shimmers, add the cutlets and cook about 5 minutes per side, until golden and 165°F in the center. Move them to a clean plate.

Melt the butter in the same skillet. Add the garlic and stir for 1 minute, just until fragrant. Pour in the broth and scrape the browned bits loose.

Add the lemon juice and simmer 3–5 minutes, until the sauce reduces a little and smells bright. Taste before adding more salt because the seasoning may already be salty.

Return the chicken to the pan and spoon the sauce over it. Warm for 1–2 minutes, then finish with black pepper and parsley if using.
