    Stir the Greek yogurt, tikka masala, garlic, ginger, lemon juice, olive oil, and salt in a bowl. Add the chicken strips and turn until coated. Marinate for at least 20 minutes, or chill for 2–4 hours.

    Mix the yogurt sauce with lemon juice, garlic, chopped mint or coriander, salt, and pepper. Cover it and set it in the fridge while the chicken cooks.

    Heat a grill pan or skillet over medium-high heat. Cook the chicken in one layer for 4–5 minutes per side, turning when the underside has browned and the edges show a little char. The center should reach 165°F.

    Warm the flatbreads in a dry skillet for 1–2 minutes per side, until soft and flexible. Shred the lettuce, halve the tomatoes, and slice the cucumber and red onion.

    Spread yogurt sauce over each warm flatbread. Add lettuce, chicken, tomatoes, cucumber, and onion, then scatter over fresh coriander and fold or roll while hot.
