    Stir the smoked paprika, garlic powder, salt, and pepper together. Pat the chicken thighs dry, cut any large ones in half, and rub the seasoning over both sides.

    Heat the oil in a large skillet over medium heat. Add the chicken and cook 5–7 minutes per side, turning when the underside is browned. The thickest piece should reach 165°F.

    Take the skillet off the heat and brush the chicken with barbecue sauce on both sides. Let it rest for 3 minutes so the juices settle.

    While the chicken rests, toss the coleslaw mix and green onions with the ranch dressing. Stop when the cabbage is coated but still crisp.

    Place one chicken piece on each bun and pile on the ranch slaw. Add another thin swipe of barbecue sauce if you like a saucier sandwich.
