    Pat tenderloins dry. Mix salt, pepper, garlic powder, rosemary, and thyme; rub all over the pork.

    Heat oil in a Dutch oven over medium-high until shimmering. Sear pork on all sides until deep golden, about 6–8 minutes total. Transfer to a plate.

    Lower heat to medium. Add onion and smashed garlic; cook 3–4 minutes until onion softens. Stir in broth and Dijon, scraping up browned bits.

    Return pork (and any juices) to the pot. Cover and bake at 375°F for 18–22 minutes, until an instant-read thermometer in the thickest part hits 145°F. Rest pork on a cutting board 5–10 minutes. Stir butter into the pan juices if using, slice pork, and spoon juices over.
