Method

4 steps

  1. 1

In a large bowl, mix 3 cups (375 g) all-purpose flour, 2¼ teaspoons instant yeast, 3 tablespoons sugar, and 1 teaspoon fine salt. Stir in 1 cup warm milk (about 110°F), ¼ cup melted unsalted butter, and 1 large egg until a soft dough forms.

  2. 2

Knead 6–8 minutes by hand or mixer until the dough is smooth and springs back when poked. Place in an oiled bowl, cover, and rise until doubled, 45–60 minutes in a warm spot.

  3. 3

Divide into 12 equal balls and nestle them in a greased 9×13 pan. Cover and rise 25–30 minutes until puffy and touching. Meanwhile, heat the oven to 375°F.

  4. 4

Bake 15–18 minutes until deep golden on top. Brush with melted butter while hot and cool slightly. You want soft, pull-apart rolls with a tender crumb — not dense hockey pucks or pale underbaked dough.
