    Peel and roughly chop 1 medium cucumber. Core and chop about ⅓ medium apple (½ cup). Pack ¼ cup fresh mint leaves (about 10 leaves).

    Add cucumber, apple, mint, and ¼ cup cold water to a blender. Blend until completely smooth, 1–2 minutes — you want a pale-green drink with no mint shreds or cucumber chunks. Add a splash more water if it's too thick to pour.

    Taste. Squeeze in a little lemon or lime if you want brighter acidity. Chill a few minutes or pour straight over ice.
