    Cover and cook on high for about 2 hours or low for about 4 hours, until the chicken is tender and reaches 165°F. Pull it apart with two forks right in the pot.

    Stir in the drained black beans, corn, red onion, salsa, cilantro, and minced garlic. Cover and cook 30–45 minutes on high or about 1 hour on low, until the filling is hot and the onion softens.

    Taste the filling and add more lime, salsa, or salt if it needs a lift. Fold in the shredded cheese if using, then let it sit 5 minutes so the cheese melts.
