Add 3 cups finely shredded green cabbage, 1 grated medium carrot, and 4 oz finely chopped shiitake mushrooms. Stir-fry until the vegetables soften and most of the moisture has cooked off, 4–5 minutes — the pan should look fairly dry, not soupy (wet filling = soggy rolls).

    Stir in 2 sliced green onions, 2 tablespoons light soy sauce, 1 teaspoon fish sauce, and ½ teaspoon brown sugar. Taste — it should be savory with a hint of sweet. Spread the filling on a plate and cool until you can handle it comfortably, 10–15 minutes.

    Mix 2 tablespoons water with 1 teaspoon flour for sealing. Place a spring-roll wrapper like a diamond.
