Heat the air fryer to 400°F. Cut the chicken thighs into bite-size pieces and pat them dry. Beat the eggs in one bowl; in another, mix the cornstarch, flour, garlic powder, onion powder, salt, and pepper.

Dip each piece in egg, let the excess drip off, and turn it through the dry mix. Arrange the pieces in one layer in the basket and spray lightly with oil.

Air fry for 10–12 minutes, turning at the halfway point, until the coating is crisp and the chicken reaches 165°F. Cook a second batch if the pieces touch.

While the chicken cooks, simmer the soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger in a saucepan for 2 minutes. Stir the cornstarch with water, add it, and simmer 1–2 minutes until the sauce coats a spoon.

Toss the hot chicken with just enough sesame sauce to coat it. Finish with sesame seeds and sliced green onions, and serve before the coating softens.
