Pat the wings very dry. Toss them with the salt and baking powder, then set them on a rack over a sheet pan and chill uncovered for at least 1 hour. The cold, dry skin browns better.

Mix the cornstarch, garlic powder, smoked paprika, onion powder, and black pepper. Pat the wings dry again, toss them in the seasoning, and shake off any heavy patches.

Grease the air-fryer basket and heat it to 300°F. Arrange the wings in one layer with a little room around each piece. Cook for 15 minutes.

Flip the wings and raise the heat to 450°F. Cook 8–10 minutes more, until the skin is browned and crisp and the thickest piece reads at least 165°F.

Serve right away with sauce or dipping dressing. If cooking in batches, keep the finished wings on a rack rather than stacking them.
