    Heat oven to 350°F. Grease a 9x13 baking dish. Cook macaroni in salted water until just shy of al dente (about 1 minute less than package). Drain; return to the pot.

    Stir butter into the hot pasta until melted. In a bowl, whisk eggs, sour cream, evaporated milk, dry mustard, salt, and pepper. Pour over pasta and stir. Fold in about 3 cups of the cheddar (and mozzarella if using) until gooey and coated.

    Spread in the baking dish. Top with remaining cheddar. Bake uncovered 30–35 minutes until bubbling at the edges and the top is golden. Rest 10 minutes so the custard sets before scooping.
