    Cook bacon in a large pot over medium heat until crisp, 6–8 minutes. Scoop onto a paper towel; leave about 2 tablespoons fat in the pot.

    Add onion and celery; cook 5 minutes until soft. Add garlic 30 seconds. Sprinkle flour over the vegetables and stir 1 minute.

    Slowly whisk in broth. Add potatoes, salt, and pepper. Bring to a boil, then simmer 15–18 minutes until potatoes are very tender.

    Mash some of the potatoes against the side of the pot for body, leaving plenty of chunks. Stir in milk and sour cream over low heat. Add cheddar until melted. Taste for salt. Serve topped with bacon, more cheddar, and green onions.
