    In a heavy pot or deep skillet, melt 4 tablespoons butter over medium. Whisk in ¼ cup flour and cook the roux, stirring constantly, 8–12 minutes until peanut-butter brown — smell nutty, not burnt. Add the trinity and cook 5–7 minutes until soft; garlic 30 seconds.

    Stir in 1–2 teaspoons Cajun seasoning, ½ teaspoon paprika, optional pinch of thyme, and 2 cups seafood or chicken stock (plus any crawfish liquid). Simmer 10–15 minutes until the sauce is thick and glossy like gravy. Fold in crawfish and simmer gently 3–5 minutes just until hot and plump — don't boil hard or they get rubbery. Finish with 1–2 tablespoons butter and a squeeze of lemon or dash of hot sauce. Taste for salt and heat.
