Step by step

Method

5 steps

  1. 1

Whisk the olive oil, ranch dressing, Worcestershire sauce, vinegar, lemon juice, garlic, and pepper. Pound the chicken between sheets of plastic wrap to an even ½-inch thickness, then place it in a sealed bag with the marinade. Refrigerate 30 minutes or overnight.

  2. 2

Heat the vegetable oil in a wide skillet over medium-high heat. Lift the chicken from the marinade, season lightly with salt and pepper, and sear 4–5 minutes per side. The surface should be golden and the thickest part should reach 165°F. Move the chicken to a baking sheet and rest it while you make the topping.

  3. 3

Heat the broiler to high, about 450°F. Stir the chopped Parmesan, provolone, and ranch dressing in a bowl. Microwave in 15-second bursts, stirring between each, until the cheese is soft and spreadable.

  4. 4

Spread the cheese mixture over the chicken. Stir the melted butter, garlic powder, and panko, then press the crumbs over the cheese.

  5. 5

Broil 3–4 minutes, watching the whole time, until the crumbs are browned and the cheese bubbles at the edges. Rest 3 minutes before serving.
