    Toast 6 slices of sandwich bread until golden and crisp on both sides — pale soft toast will go soggy fast. Spread mayonnaise on one side of each slice.

    Build two stacks: on the first toast (mayo up), layer turkey, tomato slices, and a pinch of salt and pepper. Cap with a second toast, mayo side up.
