Blooming the spices in the fat for a minute keeps the chili from tasting dusty.

A longer simmer concentrates flavor. Add a splash of broth if it gets thicker than you want.

Use what you have

Ground turkey works; cook it to 165°F before adding the tomatoes.

Use all kidney beans or all pinto beans if that is what you have.
