A clear chicken broth, tender shredded meat, and wide noodles make a bowl you can put on the table without a long simmer.
Amounts scale with servings. Pan size and cooking time may need adjusting for larger batches.
Warm the oil in a large pot over medium heat. Add onion, carrots, and celery and cook for 8 minutes, stirring now and then, until the onion is soft.
Stir in the garlic for 30 seconds. Pour in the broth and add the chicken, salt, and pepper. Bring to a gentle boil, then lower the heat and simmer for 18–20 minutes, until the chicken reaches 165°F.
Lift out the chicken and shred it with two forks. Return the meat to the pot, add the noodles, and simmer for 6–8 minutes, until the noodles are just tender.
Taste the broth and adjust the salt. Stir in parsley and serve hot.
Cook only the noodles you plan to eat tonight if you want leftovers; they keep soaking up broth in the fridge.
Thighs stay tender in a simmer. If you use breasts, start checking the temperature a few minutes earlier.
Rotisserie chicken works: shred 3 cups and add it with the noodles so it only needs to heat through to 165°F.
Any short pasta can stand in for egg noodles; use the package time and keep an extra splash of broth nearby.
Freeze the broth and chicken without noodles for up to 3 months. Thaw in the refrigerator, reheat to a boil, then cook fresh noodles in the pot.
Stop the simmer as soon as the noodles are tender, and store leftovers with the noodles in a separate container when you can.
