    Add 1 cup fresh cilantro leaves and tender stems, ½ cup Greek yogurt or mayo, ¼ cup olive oil, juice of 2 limes, 1 garlic clove, 1 tablespoon honey (optional), and ½ teaspoon salt to a blender.

    Blend until completely smooth and bright green, 30–60 seconds. Scrape down the sides once so no leafy bits hide.

    Add 2–3 tablespoons water a spoonful at a time, blending between additions, until it pours easily but still coats a spoon. Taste — add salt or another squeeze of lime if it tastes flat.

    Chill at least 15 minutes so the garlic mellows and the flavors settle. Shake or stir before using; keeps in the fridge up to 5 days. You want a bright, creamy green dressing that pours and clings — not a thin watery sauce or a bitter blender puree.
