Scoop 1½-tablespoon mounds 2 inches apart. Bake for 10–12 minutes, until the edges are set and the centers look slightly underdone. Cool on the sheet for 5 minutes, then move to a rack.
Pull the cookies when the centers still look soft; they finish on the hot pan.
